Beetroot, Peas & Flower Arranging: A Weekend of Food & Flowers

24 – 25 May 2025

Den Gamle By’s gardeners and cooks invite you into the gardens for a weekend exploring the connection between food and plants.

Gain insight into how Den Gamle By’s cooks and gardeners work together to grow and use historical vegetables and herbs in the kitchen – and about how to create decorative arrangements for the table.

In the tent at the Festival Grounds, you can take part in a range of activities that engage the senses and offer a chance to learn more about both historical and modern collaborations in propagation, preservation, and the forgotten world of bitter flavours.

Ingredients Forgotten Over Time

Learn about the once-essential – and surprisingly healthy – ingredients in cooking that have been lost over time, such as the use of peas in baking.

Learn Flower Arranging & Decorative Techniques

In the tent at the Festival Grounds, you can learn about decorative techniques and try your hand at arranging flowers yourself.

Taste Historical Varieties

Try tasting, for example, a “Detroit Dark Red” beetroot from the 19th century alongside a conventional supermarket beetroot. Can you taste the difference?
